· 4 cups low-fat plain yogurt
· 2 tomatoes
· Lemon leaves
· A pinch of grated ginger
· Mint leaves
· Olive Oil
· Lemon juice
· Salt and Pepper to taste
1. Peel the tomatoes, remove the seeds, and chop them in small pieces.
2. Grate the ginger and mix it with the lemon leaves, add a little Olive Oil and lemon juice.
3. Add salt and pepper to taste.
4. Leave the mixture in the freezer for about 30 min.
5. Stir the yogurt until smooth and add the mixture that was left in the freezer, mix everything together.
6. Serve with Mint leaves on top.
