· 3 cups peeled chopped tomatoes
· 1/4 cup thinly chopped parsley
· 1 small onion, sliced
· Lemon juice
· Extra Virgin Olive Oil
· Salt and ground black pepper to taste
1. To peel tomatoes, cut a small, shallow X into the bottom of each tomato.
2. Place into boiling water for 1 minute and then immediately plunge into ice water.
3. Remove, dry and peel skin.
4. Chop tomatoes and put them in a large bowl.
5. Add the parsley and the onion.
6. Mix some Olive Oil, lemon, salt and the black pepper, and pour it on top of the salad.
